puranpoli,Authentic Mharastrian recipe..During Ganesh chaturthi
or holi, we offer as Nevyadya.And distribute this sweet as prasad.
split bengal gram - 150 gms
jaggery 150 gms
all purpose flour- 150 gms
wheat flour-50 gms
oil- 50 ml
For puran- wash bengal gram also known as chana dal,soak in water for 4 to 5 hours.once soak ,pressure cook for 10 mins.
.once chana dal cooked completely, strain it.Keep stock handy,you can use that stock to make katachi aamti as well as used if your puran becomes dry mash the dalwith smasher.now add the jagegery in dal and cook till jaggery melts and it becomes dry completely.add cardamom/nutmeg powder.mix well. switch off the gas .make lime size ball of puran.you can make around 10 puranpoli of it.
Mean while take flour,add salt,turmeric, knead by adding water
Make soft dough, add oil knead again for making puranpoli-
take lime size ball of dough,with fingers just make as a puri,place
the puran in center,seal the edges and roll it with rolling pin
as chapati. be careful while making.heat the pan ,place the rolled
poli on pan add some ghee ,cook on low medium flame. flip and
cook on other side. put ghee on other side. once poli gets brown spotson it ,it means its ready. serve puranpoli with,ghee or milk or bestcombination is katachi aamti which is prepared from dal stock.
